It’s almost Christmas time! Yaay! One of my favorite times of year. Thanksgiving happens to be my most favorite. We had a really fun Thanksgiving this year here in Lesotho. Our friends hosted it at their house and we had a few peace corp volunteers over and one of our local friends.
Last year for Christmas I asked my husband for a slow cooker. I love it! It’s a great gift! However, I had rarely used it until very recently.
A few weeks ago, Piet and I were in a nearby city in South Africa. It’s nice to sometimes take a breather from village life and go shopping and feel…normal…for lack of a better word. I am one of maybe 10 white people here so everyone knows my every move. When I go shopping, they look to see what I’m buying, when I’m with Harmony, they want to hold her. Sometimes it’s nice to be around other Caucasian people. Though in reality, we STILL get quite a lot of attention when we cross the border because we are one of two black and white couples. The other couple happens to be our co-workers.
Another reason we like crossing the border into this town is because we enjoy unlimited internet for a limited amount of time. Haha. We have become very strategic about eating lunch at the same place whenever we go (and they definitely know us by now) and do as many things as possible on the free Wi-Fi while we inhale our food.
So, on this particular day I was looking up easy slow cooker recipes. Bingo! Or, as they say on Harmony’s absolute favorite movie, “Lightbulb!!” (In case you don’t know the reference—Despicable Me. I’d guess we have watched that movie 3 times a week for the last 6 months. If she won’t eat, turn on Despicable Me, if she’s fussy, Despicable Me.)
Back to my slow cooker recipes. I found a GREAT and delicious recipe on a website called “Family Fresh Meals” that I wanted to share. I made it right after I found it and it turned out awesome! Unfortunately my husband doesn’t love American style BBQ (shocking, right?), but he did enjoy this.
Slow Cooker BBQ Chicken
3-4 Boneless Chicken Breasts
1 cup BBQ Sauce
¼ cup brown sugar
¼ cup Italian dressing
1 tablespoon Worcestershire sauce
salt to taste
Salt the chicken breasts, place in slow cooker. Mix bbq sauce, sugar, dressing, and Worcestershire together. Pour mixture on the chicken. Cook on HIGH for 3-4 hours (mine was done in 3 hours).
After cooking time is finished, you can shred it with two forks and let it sit in the sauce for another 15 minutes.
Enjoy on hamburger buns and maybe some coleslaw!
